Wild Game Description:

A blend based around a garlic and bay leaf core with some warmth from Turkish pepper and a little chilli. Best made with red wine added into the mix. This sausage seasoning can also be used as a hamburger seasoning.

Best paired with: Venison, Goat, Beef or Duck.

Size:

5kg Batch – 45g per 1kg of meat.

What you need:

  • 4kg Venison, Goat, Beef or Duck.
  • 1kg Pork (approximately 40% fat)
  • 500ml Red Wine
  • 1pk Carnivore Collective Wild Game Sausage Mix

Method:

  • Mince meat with a medium plate.
  • Combine spices, wine and water with meat.
  • Mix thoroughly, kneading the meat until it is sticky.
  • Fill chosen casings
